Contempo Cafe at the Contemporary Resort serves up a satisfying vegetarian salad of Roasted Curry Vegetables mixed with Romaine Hearts, Bulgar Wheat, Dried Cherries and Yogurt-Pesto Dressing. The best part is that it currently rings in at only $6.69. Zucchini, squash and potatoes reminiscent of 2011 Food & Wine’s Bunny Chow are well-seasoned and served warm atop the greens.
Dressing can be either tossed in or on the side. I ordered it tossed in, and found the greens to be -just-enough dressed. Yogurt was the prominent flavor of the dressing, and I had difficulty tasting anything like pesto. Still, it was light and refreshing with a great tanginess that cooled the mild curry.
After a big of digging, I found the bulgar wheat and dried cherries (as well as more roasted veggies!). The bulgar gave some textural contrast, as did the cherries with their slight chew. I loved how the sweetness from them played off the creamy dressing and spices of the vegetables.
This was a vegetarian salad that’s been done right, consisting of interesting flavors and less run-of-the-mill ingredients so commonly offered as an option. It falls more in line with the uniqueness of the South African Quinoa Salad at Tamu Tamu Refreshments in Animal Kingdom than the more readily available garden-type salads, hold the chicken.
